Mexican Tofu Scramble
- Makes: 6 servings
- Ingredients:
- 3 c. fat-free egg substitute or 24 egg whites
- 10 oz. soft tofu
- 3 tbsp soy sauce (reduced-sodium)
- 1 tsp turmeric
- ¼ tsp black pepper
- 1 tomato, diced
- ½ ionion, diced
- 2 garlic cloves, peeled and minced
- 2 tbsp green chilis, diced
- ¼ tsp ground cumin
- ¼ c. cilantro, chopped
- Directions:
- Beat egg substitute or egg whites until broken up and just beginning to foam. Crumble the tofu and add to egg mixture. Add the soy sauce, turmeric, and pepper set aside.
- In a skillet at medium heat, add the tomato, onions, garlic, chili, and cumin until all the liquid has evaporated.
- Add the egg/tofu mixture to skillet. Scramble over medium heat until thoroughly cooked. Add chives or cilantro and serve.
