Potato and Parsnip Casserole
- Makes: 8 servings
- Ingredients:
- 1½ c. parsnips, peeled and chopped
- 1½ c. potatoes, chopped
- ½ c. non/lowfat Swiss cheese, grated
- 1½ tbsp non/lowfat Parmesan cheese, grated
- 3 tbsp evaporated skim milk
- 1 tbsp non/lowfat margarine
- 3 tbsp parsley, chopped
- Directions:
- Steam parsnips and potatoes for 10-12 minutes or until tender.
- Drain and return vegetables to pan, mash.
- Stir in next 5 ingredients and pour mixture into a baking dish coated with nonstick cooking spray (nonfat).
- Bake at 375 degrees F for 20 minutes.
