CHOCOLATE BANANA BREAD
- Makes: 12 servings
- Ingredients:
- ¼ c. non/lowfat margarine
- ¾ c. sugar
- 2 bananas, mashed
- 2 egg whites or 2 tbsp. egg substitute
- 1¾ c. flour
- 3 tbsp. unsweetened cocoa
- ¼ tsp. salt
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ c. non/lowfat vanilla yogurt
- 1 tsp. vanilla extract
- Directions:
- Coat loaf pan with nonstick cooking spray (nonfat), sprinkle with flour.
- Set aside.
- Using an electric mixer, beat margarine and sugar.
- Add remaining ingredients.
- When smooth, pour batter into pan.
- Bake at 350 degrees F in center of oven for 50-60 minutes.
- Let stand 5 minutes, remove from pan and finish cooling on wire rack.
