LEMON POTATOES
- Makes: 8 servings
- Ingredients:
- 1½ pounds new potatoes
- 1½ tsp. non/lowfat margarine
- 1½ tsp. lemon peel, grated
- 1½ tbsp. lemon juice
- 1½ tbsp. green onions, chopped
- Directions:
- Steam potatoes for 12-15 minutes.
- Rinse under cold water and peel.
- Melt margarine in a nonstick skillet over medium low-heat.
- Add remaining ingredients and potatoes, stir until potatoes are coated with mixture and heated.
