SHRIMP STIR-FRY WITH VEGETABLES

  • Makes: 8 servings

  • Ingredients:
    • 1 tbsp vegetable oil
    • 1 garlic clove, minced
    • 1 pound medium shrimp
    • 12 ounces green beans, drained
    • 1 tbsp plus 1 tsp lite soy sauce
    • 2/3 c. instant rice

  • Directions:
    • Prepare rice according to package directions.
    • Add oil to a nonstick skillet and heat over high heat.
    • Add all ingredients, except rice.
    • Stir-fry for 3-5 minutes.
    • Serve over rice.

    • Serving Size - 1 cup
    • Calories - 220
    • Fat - 5 gr
