BERRY TAPIOCA PUDDING
- Makes: 8 servings
- Ingredients:
- 3 tbsp sugar
- 2 tbsp tapioca
- ½ c. orange juice
- 1½ c. sweetened raspberries, mashed, reserving syrup
- 2 c. strawberries, sliced
- 1 banana, sliced
- ½ non/lowfat vanilla yogurt
- Directions:
- Combine sugar, tapioca, orange juice and reserved syrup from raspberries in a saucepan and bring to a boil over medium heat, stirring constantly.
- Pour into a bowl and set aside to allow pudding to cool.
- Stir in berries and bananas.
- Cover and refrigerate.
- Serve with a spoonful of yogurt.
