Pork Chops and Rice
- Makes: 6 servings
- Ingredients:
- 6 pork chops
- 1½ c. rice
- 2 c. chicken stock
- 1½ pounds canned peeled tomatoes, chopped
- 1½ leeks, chopped
- ½ c. green onions, chopped
- ¾ tsp. rosemary, chopped
- 2 garlic cloves, minced
- Directions:
- Heat a nonstick skillet over medium-high heat and saute pork chops two minutesper side and remove from skillet.
- Add remaining ingredients to the skillet and bring to a boil.
- Reduce heat to low, place pork chops on top of rice and simmer for 35-40 minutes.
