GLAZED CARROTS
- Makes: 8 servings
- Ingredients:
- 2¼ pounds carrots, sliced
- ¾ c. pineapple chunks, drained and juice reserved
- 1 tbsp non/lowfat margaine
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- Directions:
- Steam carrots for six to seven minutes.
- Drain carrots and return to saucepan.
- Combine pineapple, margaine, and lemon juice with carrots.
- Stir and simmer over low heat for 3-4 minutes.
- Mix cornstarch with ¼ c. plus 2 tbsb. of reserved pineapple juice.
- Add juice to carrots and stir constantly until mixture thickens.
